Our Philosophy
Nihonbashi’s founder, Dharshan Munidasa shares a common heritage between the two countries through his Japanese mother and Sri Lankan father. The restaurant reflects his unique legacy and innovative thinking. A Computer Engineer and International Relations graduate, Dharshan started the Nihonbashi journey straight out of John Hopkins University, USA. The journey may have been challenging but backed by his passion for Japanese cuisine Dharshan has changed the dining arena of Sri Lanka with a restaurant that is now popular throughout the world. Dharshan is always around at the main restaurant at Galle Face Terrace and he’ll make sure that your meal is an unforgettable one.
Dharshan’s Vision
‘At Nihonbashi I have strived to instill a deep seated Japanese principle, where we try to bring out the best in an ingredient with every thing we do, always keeping the final result in mind. We do this because the complexity of Japanese cuisine stems from its simplicity. For example to serve the best tuna sashimi in Sri Lanka we have to find the best tuna!
In fact, we must be the only restaurant in the world to purchase tuna whole from the docks where it is graded and most of our seafood is purchased from those destined for overseas markets and sometimes hard to find in the country.Nihonbashi encapsulates uniqueness, simplicity and attention to detail. After the perfect dish is created, we present it on plates I hand pick in Tokyo or personally design with the unique nature of the cuisine in mind.The restaurant's commitment to perfection has also taken it international, where in the Maldives, Nihonbashi has earned the accolade of being the only Sri Lankan restaurant to be invited to present special dinners at some of the most sought after resorts in the world.
